Spicy Chipotle Pumpkin Hummus

Ingredients

  • 1 (15 oz can) Chickpeas / Garbonzo Beans

  • 1 (15 oz can) Pumpkin Puree

  • 1/4 cup of Tahini

  • 3 cloves of Garlic

  • 2 Chipotle Chiles in adobo sauce

  • 2 tablespoon Lemon juice

  • 2 teaspoons Olive Oil

  • 1 teaspoon freshly ground black pepper 

  • 2 teaspoons salt, or to taste 

  • 1 teaspoon ground cumin

  • 1 teaspoon smoked paprika (1/2 for garnish)

Steps:

  • In a food process, pulse lemon juice, tahini, garlic, and salt together until it forms a paste. Add chickpeas. olive oil and chipotle chilies and pulse until smooth.

  • Add the pumpkin puree, cumin, and smoked paprika, pulse until well combined.

  • Transfer to a bowl, plate or pumpkin! Garnish with olive oil, smoked paprika, and roasted pumpkin seeds!

  • Goes well with corn bread biscotti.

Refrigerate until ready to serve.
