Spicy Chipotle Pumpkin Hummus
Ingredients
1 (15 oz can) Chickpeas / Garbonzo Beans
1 (15 oz can) Pumpkin Puree
1/4 cup of Tahini
3 cloves of Garlic
2 Chipotle Chiles in adobo sauce
2 tablespoon Lemon juice
2 teaspoons Olive Oil
1 teaspoon freshly ground black pepper
2 teaspoons salt, or to taste
1 teaspoon ground cumin
1 teaspoon smoked paprika (1/2 for garnish)
Steps:
In a food process, pulse lemon juice, tahini, garlic, and salt together until it forms a paste. Add chickpeas. olive oil and chipotle chilies and pulse until smooth.
Add the pumpkin puree, cumin, and smoked paprika, pulse until well combined.
Transfer to a bowl, plate or pumpkin! Garnish with olive oil, smoked paprika, and roasted pumpkin seeds!
Goes well with corn bread biscotti.
Refrigerate until ready to serve.
