HASSELBACK POTATOES WITH GARLIC & HERB BUTTER

Have some fun with your food! This recipe is super easy and so fun to make & Enjoy! Each slice is like a little potato chip!

Ingredients

  • 6 Medium baking potatoes
  • 1 stick of butter
  • 1⁄4 cup of olive oil
  • 1 small yellow onion
  • 4 garlic cloves
  • 2 sprigs of Rosemary
  • 2 sprigs of parsley
  • 1⁄2 cup of parmesan cheese

Instructions

  1. Preheat the oven to 425 degrees.
  2. In a small saucepan, add butter, onions and herbs and let simmer.
  3. Peel the potatoes and cut a thin layer off the bottom to keep from rolling. Use 2 wooden spoons on either side of the potato to keep your knife from cutting through. Using a super sharp knife, cut 1⁄4 inch cuts along the length of the potatoes.
  4. Add the potatoes to a baking dish.
  5. Using a mesh strainer, strain the butter from the herbs and onions into a bowl. Drizzle the butter on the potatoes.
  6. Bake in the oven for 45-50 minutes. (or until golden brown)
  7. Remove from the oven and add a little more butter, broil until the edges become crispy like chips.
  8. Add parmesan cheese and return to the oven 5 minutes or until melted.
  9. Enjoy!
