Instructions

  1. In a large pot, bring 3 cups of water to a boil, add in the squash and cook until soft. Remove and set aside.
  2. In the same pot, add the butter and cook the onions until translucent. Add herbs and return the squash to the pot.
  3. Add chicken stock and bring to a simmer. Once everything has have a little time to cook together, remove from the heat and pour into a mixer (make sure it can handle heat).
  4. Mix thoroughly and return to the pot. Add heavy cream and maple syrup and let it come to a simmer.
  5. To serve, add bacon and sour cream to the top! Enjoy!
