Quick and Delicious Paella
The perfect way to make Paella in under 30 minutes!

- In a dutch onion, add 1-2 tablespoons of olive oil, bring to a medium heat and add your sausage. Let is cook until the oils have released, then add your chicken. Cook on medium heat until everything is starting to brown. (You don't need to fully cook the chicken at this point.)
- Add your onions and garlic, mix well. Then add your rice blend. Mix everything well enough to see the rice get coated with the oils from the sausage.
- Add your tomato paste and saffron, mix well. Then, slowly add your chicken stock. Mix well and make sure there is enough chicken stock to cook the rice. You may need to add a little extra to ensure there is enough. Put the lid on and let cook on a medium heat for 20 minutes.
- Stir the paella to make sure the rice is fully cooked. If you need to add a little more chicken stock and cook longer, do so now. Once the paella has fully cooked, add your peas and mix.
- In a bowl, add your paella and garnish with fresh scallions. Enjoy!
