Chipotle Slaw
Chipotle slaw is one of my favorite side dishes. Spicy, crunchy, fresh - what's not to love! Super quick and easy to make a few hours before you serve and a guaranteed hit.
Here is what you will need:
One head of Red Cabbage chopped
3 Green Onions chopped
1/3 cup of chopped cilantro
Dressing:
1/3 cup of Mayonnaise
4-6 finley chopped chipotles
1 tablespoon of sugar
pinch of salt and pepper to taste
First mix the chipotle, mayo, sugar, salt & pepper to a separate bowl.
Mix well to combine and break down the chipotle... combine well.
Now mix the cabbage, cilantro and green onion in a large bowl and add the slaw... mix slowly until all incorporated. Cover and refrigerate for at least 2 hours, mixing every 30 minutes or so.
Serve with a garnish of cilantro on the side of BBQ Chicken, Ribs, Burgers or Pulled Pork. ENJOY!
