INGREDIENTS:

 

•   4 tablespoons of Butter 

•   2 large Yellow Onions, chopped 

•   3 cloves of chopped Garlic 

•   1 teaspoon of salt

•   2 teaspoon Pumpkin Pie Spice 

•   2 (15 oz) cans of pumpkin puree 

•   2 cups of Chicken Stock

•   2 cups of Water

•   ½ cup heavy cream 

•   Sour cream, smoked paprika and chive for garnish

DIRECTIONS:

1. Melt butter in a large pot on medium heat. Once melted add onions and stir for 15 minutes on low heat until translucent then add garlic. 

 

2. Add spices and mix well. Add ¼ of your chicken stock and scrape up the brown bits on the bottom of the pan to preserve the spices and keep them from burning. Add the rest of your chicken stock and water. Stir. 

 

3. Once that has come to a nice simmer, add the pumpkin puree and let come to a simmer. Then add heavy cream. Let simmer for 20 minutes. Once the soup starts to bubble a little, pour into a food processor or blender. Blend until thick and smooth. 

 

4. Serve with a garnish of sour cream and chive! 

 

Tips:

 

This is a delicious dish warm or cold! If you are going to make this for a party, make it a day ahead, refrigerate and serve in small shot glasses with garnishes day of. 

 

If you prefer spice, add a little cayenne pepper!
