Crispy Chicken & Brown Caper Sauce with Burrata
This is a super easy, fresh and delicious dinner during the summer! Enjoy!

- In a cast iron skillet, add 3-4 tablespoons of olive oil and bring to a slow medium heat.
- In a bowl, add 2-3 eggs and whisk. In another bowl, add the Panko, parmesan cheese, salt, pepper and garlic salt if you have it.
- Add the sliced chicken breast to the eggs (fully coat), then add to the panko mix (fully coat), and add to the hot cast iron skillet. Cook on both sides until done. (should be crunchy and golden)
- For the brown butter caper sauce, add 1 stick of butter to a pan, on low to medium heat, cook down until it starts to turn golden brown. Then add garlic and capers. Cook until fragrant. (periodically
- To serve, add the chicken to a plate, top with a slice of the fresh burrata and drizzle the brown butter caper sauce. I love to use a little fresh parmesan cheese and basil for a garnish. Enjoy!
